Hi, I’m Irfan Dama, Chief and founder of Daavat Culinary Academy. Already 20 years…. As a chef I have worked with corporations such as Google, Walmart... In tech companies and in universities, a lot of the people are of Indian origin. They wish to have a traditional Indian lunch and the cooks and chefs are not trained to deliver this cuisine. They can mostly do basic recipes. That’s where the gap exists. There is very little understanding of what the food should look and taste like outside of the restaurant framework. We have lived experiences of the Indian food that we bring to the table. To us, it’s not Indian food, it’s “Food”. Having worked extensively in the corporate dining industry, we understand the language of the kitchen as well.
